Pancake Art

Little Man asked if he could make pancake art this past weekend. He wanted to make the family a pancake art lunch. Not to be left out Little Miss wanted to stir the pancake batter, she is our resident mixer after all. We mixed up our favorite pancake recipe, any recipe or box mix will do.  Separate the batter into 4 bowls (to make red, yellow, green and blue) add about 4 drops of food coloring to each bowl stirring and adding more drops of food coloring until the colors are the shade you want. Since I don't have any bottles we used sandwich bags with a corner cut off to pipe the pancake batter into shapes. In order to reduce the mess we stood the bags in plastic cups. My pancake artist making his edible masterpiece, this one was an Among Us character.  Happy cooking!

Cooking Show

   At the beginning of the summer when we were talking about all the activities we would do my little man said that he wanted to make a cooking show and that I should put it on TV. He came up with the idea that in each episode he would dress up as a character and make a snack having to do with that character. Since he has a closet full of costumes of characters ranging from Angry Birds to Darth Vader. He decides which recipe he wants to make with very little help from me. He is passionate about this and it makes me happy to support him in his creativity. Since the last week of summer vacation is coming up, I finally uploaded the first installment of Cooking With Characters onto YouTube. Hope you enjoy!   

Frozen Yogurt Sundae Bar

Summer is in full swing and with it comes the time for ice cream treats. This is an idea for a healthier version of the traditional ice cream sundae in an edible bowl. Ingredients: Tortillas (one per serving) Cinnamon and Sugar Frozen Yogurt (any flavor) Fruit (fresh or frozen) cut into bite sized pieces Cookie pieces (crush up any cookies you have on hand) Cherries   To make the edible bowls:   Preheat the oven to 350 Arrange small oven proof dishes bottom side up on a cookie sheet Place the tortillas on the dishes wrapping the sides of the tortillas around the dish and pressing down to make an upsidedown bowl shape Sprinkle the tortilla bowls with cinnamon and sugar Bake for 15 minutes or until the tortillas are crispy Let cool      Prepare bowls of toppings, you can use any fruit you have on hand fresh or frozen, cookie pieces and cherries. Summer Fruit Cups

This is a fresh, light dessert with just a little bit of chocolate and lots of summer fruit. It's a great  recipe to get the kids in the kitchen. Ingredients: Cherries (pitted and halved) Blueberries Cantaloupe (cut in chunks) Mini marshmallows Melted chocolate  (about 1/4c of chocolate chips melted in the microwave or in a double boiler) You will also need muffin papers Step 1: Fill the muffin papers with the fruit starting with the larger pieces. Any fruit combination works for this dessert. Step 2: Top the fruit with a couple of marshmallows and drizzle with the melted chocolate  Tip: prepare this dessert in a muffin tin and refrigerate until dessert time. Bon appétit!

Easy Chocolate Pudding Dessert

Moms love coffee (well this one does!) This is an easy coffee cup inspired dessert that the kids can make all by themselves for a Mother's day treat! Ingredients 1 package of chocolate pudding 1 cup of  chocolate chips 4 tbsp of whip cream Step 1 Prepare Pudding as directed on the package. Spoon into 4 glass coffee mugs. Refrigerate Step 2 Place the chocolate chips in a microwave safe bowl. Microwave for 1 minute stopping at 30 seconds to stir. When the chocolate is melted, remove from the microwave using oven mits. Using a spoon make an S like design dripping the chocolate onto a flat piece of wax paper. Make one design per cup of pudding. Freeze until ready to use. Step 3 Remove the pudding cups from the fridge and the chocolate designs from the freezer. Spoon (or spray) a thin layer of whip cream into each cup. Smooth out with the back of a spoon. 3 Ingredient Cookies

This is my take on the 2 ingredient cookie which is banana and oats. They sound deliciois but I am allergic to bananas so I set out to find a replacement. I found that unsweetened applesauce works out great! The add ins are endless.One of my creations turned into a 6 ingredient cookie but it was delicious.  Ingredients 1 cup of oats 1 cup of applesauce (unsweetened with cinnamon) 1/2 cup of raisins (or other add ins) Add in pissibilities: Raisins, walnuts, almonds, chocolate chips, cranberries, blueberries, coconut etc. Directions: Preheat the oven to 350° Combine the oats applesauce and raisins in a bowl Spoon the oats onto a parchmin lined sheet Bake for 15 minutes That's it, enjoy the healthy cookies and enjoy the easy clean up!

These are some spooky food ideas that are fast and easy enough to make before going out trick or treating! English Mummy Pizzas Ingredients: English Muffins Pizza sauce Mozzarella cheese cup into strips Cherry tomatoes Your favourite toppings: Pepperoni Chopped Peppers Directions: Toast english muffins (to keep them from getting soggy) place on a baking sheet. Spread pizza sauce over the english muffins top with your favourite toppings. Arrange the strips of cheese over the toppings,  leaving a space for tomato eyes. Broil for 1-2 minutes. Grilled Pumpkin Cheese Directions: Prepare your favourite kind of grilled cheese. Cut grilled cheese into the shape of a pumpkin, cutting out the eyes, nose and mouth. Ghosts in the Shepherd's pie Directions: Prepare your favourite shepherd's pie recipe as normal keeping one cup of mashed potatoes and a few pees aside. Cook shepherd's pie as usual.
