Garden Update and Mango Salsa Salad Recipe

Our rocks grew, or they were replaced by lettuce and tomatoes! 
Our basil, parsley and mint are taking over.
It is so nice to have fresh herbs and veggies within a few steps of the kitchen!

Mango Salsa Salad with Chicken
 
So, now I have a pot full of fresh herbs to use up! Mangoes and avocados were on sale this week so I put it all together and came up with this salad that tastes like mango salsa in an edible tortilla bowl, it was a hit!

Ingredients:
 
1 Mango
1 Avocado
Cherry tomatoes
Chopped rotisserie chicken
Parsley
Mint
Basil
Olive oil
Lemon juice
Salt and pepper
Tortillas

Directions:
 
Preheat oven to 350º
Ball up tin foil and place on a baking sheet
Place tortillas on top of tin foil pressing down to make an upside down bowl
Bake for 15 minutes
 
 
Meanwhile chop avocado, mango and tomatoes. Place in a large bowl and toss with herbs, olive oil, lemon juice, salt and pepper add chicken
Spoon salad into tortilla bowls and enjoy!
