Apple season

We went apple picking last weekend and much to my surprise it was probably the last weekend the orchard would be open! It was such a beautiful weekend I imagine by Sunday afternoon there weren't many apples left. Because there was only McIntosh apples trees left we got a 10 pound bag for $8.00. Now besides eating them right out of the bag, what to do with these apples.

First off there's applesauce!
  • 12 apples
  • 4 cups of water
  • Cinnamon
  • Nutmeg
Peel and cut the apples. Place all ingredients in a medium saucepan with a lid. Cover and boil over medium-low heat for about 25 minutes.
And while you're making applesauce you might as well make....

Applesauce Oatmeal!
  • 2 1/2 cups water
  • 1 cup instant oatmeal
  • Dash of salt
  • 1/2 cup applesauce
  • 1/4 cup walnuts
  • Maple syrup 
Cook the instant oatmeal as indicated on package. Add the applesauce, walnuts and maple syrup for the last 5 minutes.

And then there is Applesauce muffins! This is a delicious recipe from 100 Days of Real Food Whole Wheat Applesauce Carrot Muffins. I have used this recipe as is and I've switched the carrot for more applesauce and used maple syrup instead of honey, delicious!
