Winnie-the-Pooh Rainy Day Picnic


This week's Winnie-the-pooh picnic was the kid's menu as a rainy day picnic. I altered the recipes to fit what we like as well as what we had on hand.

On the menu:

  • Pink Lemonade with Strawberries
  • Cherry tomatoes and cucumbers with balsamic-honey dressing
  • Peanut butter, apple and (turkey) bacon sandwiches
  • Ambrosia fruit salad
Preparation time: 20 minutes

Ingredients:

Pink lemonade with strawberries

1/2 pint of strawberries
1/2 cup of sugar
Juice of 6 lemons
5 cups of cold water

Cherry tomatoes and cucumbers with balsamic-honey dressing

7 cherry tomatoes
1/2 cucumber
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp honey
Salt pepper

Peanut butter, apple and turkey bacon sandwiches

Peanut butter (or wow butter if someone is allergic)
1 apple pealed cored and thinly sliced
4-6 pieces of turkey bacon (2 pieces per sandwich)
4-6 pieces of bread (2 pieces per sandwich)

Ambrosia fruit salad

1/2 pint of strawberries
1 cup red grapes halved
1 orange
2 peaches
1/2 cup mini marshmallows

Directions:

Tip: Preparation consists mostly of chopping the fruits and veggies. If you chop everything the kids can assemble the salads while you make the dressing and cook the bacon. Once that is done you can assemble the sandwiches while the kids stir in the ingredients for the pink lemonade.

1- Chop strawberries. Put half in a bowl with the sugar and set aside. Cut the rest of the fruits and vegetables.
2- Place the fruit and marshmallows in a bowl and stir. Place the vegetables in a bowl.
3- Mix together the balsamic vinegar,  oil, honey, salt and pepper.  Pour the dressing over the vegetables and stir.
4- Cook the bacon. While the bacon is cooking lightly toast the bread.
5- To assemble the sandwiches spread each piece of toast with the peanut butter layer the apples and the bacon top with a piece of toast. Cut each sandwich in four, put a toothpick in each section to keep the sandwich together.

6- Combine the lemon juice water and strawberries in their syrup in a large jug, stir.
Put a blanket or towel on the living room floor.  Set all the food, plates, forks and cups on the towel. We invited Winnie-the-Pooh, Tigger and Eyore to join us as well!

Extra supplies suggested in the cookbook are board games to play after lunch.
