Gingerbread Ghouls


Use your favourite gingerbread cookie recipe to make these fun Halloween treats. I like this recipe from Kraft Canada for Gingerbread People.

Ingredients:
  • 3/4 cup butter
  • 1/2 cup brown sugar
  • 1 package (4 servings) butterscotch instant pudding 
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • Tube white icing

Directions:
  1. Beat butter, sugar and dry pudding mix in large bowl with mixer until light and fluffy. Blend in eggs. Mix all remaining ingredients except icing. 
  2. Gradually add to pudding mixture, beating well after each addition. 
  3. Refrigerate 15 min.
  4. Heat oven to 350°F. 
  5. Cut into gingerbread-man shapes. Place, 2 inches apart, on baking sheets sprayed with cooking spray.
  6. Bake 10 to 12 min. or until edges are lightly browned. Cool completely. 
  7. Use icing to draw skeletons on the gingerbread cookies. For mummies draw lines with the icing, covering the whole cookie place mini chocolate chips for eyes.
