Slow Cooker Season Kickoff!

Every year on September 1st I get the urge to take out the comfy sweaters, jeans and the slow cooker! Today it was far from sweater weather but over cast so slow cooker chicken didn't feel out of place.

I love this recipe, which is a modified version of this Kraft recipe slow cooker chicken "osso buco". You can add any veggies to it and prep is as simple as cutting and dumping.

Slow Cooker Saucy Tomato Chicken

Ingredients:
  • 2 boneless skinless chicken breasts
  • 1 large carrot finely chopped
  • 1 celery stalk finely chopped
  • 1 can garlic and olive oil diced tomatoes
  • 2 tbsp sun dried tomato and oregano dressing
  • 1 tsp lemon juice
  • 1/4 cup flour
  • pepper

Directions:

  • Cut chicken breasts into chunks.
  • Place chicken, flour and pepper into slow cooker, stir to coat
  • Add the rest of the ingredients to the slow cooker, stir to combine
  • Set the slow cooker to slow 4 hours. Cooking times are tricky, my slow cooker is big and cooks fast so low on 4 hours is what works for my cooker. High for 4 hours might work best on others, I suggest making this for the first time on a weekend afternoon when you're around to check the cooking speed.
Serve over rice or noodles with cheesy garlic bread
Bon appétit
