5/21 Yoga Challenge

Image
5 minutes of yoga a day for 21 days can you and your kids do it? Back in December I gave myself the challenge of doing yoga every day for 21 days. Apparently it takes 21 days to develop a habit. As of today I have been doing yoga everyday for 41 days. Some days I do yoga for 45 minutes and some days I do 5 minutes but as predicted it has become a habit. When I got the news letter from Pedayoga  proposing their challenge for parents and children to complete at least 5 minutes of yoga a day I thought it would be a great idea. I try to do yoga with my little man at least 3 times a week anyways. I asked him if he wanted to try yoga every day for 21 days and his answer was "no I don't think so." Later that day I asked him if he wanted to do yoga and he said "oh yeah!" So my lesson for that day was not to plan too far ahead. Make it a game and he'll want to play. I took a chance and signed us up for the 5/21 yoga challenge. So far so good. It helps me have

A Little Taste of Summer!

Image
It's happening again, too many days of -30 and we all start dreaming of summer. My little man asked if we could have a picnic in the living room like we did  last winter . So we had a lunch picnic and pretended it was summer! Pizza Skewers: Pepperoni Cherry tomatoes Orange pepper  Cheese cut into squares Pizza sauce Skewers Arrange the pepperoni, tomatoes, orange peppers and cheese on the skewers. Serve with warm pizza sauce for dipping.  S'mores bites: Ritz crackers Milk chocolate squares Marshmallows Layer the chocolate and marshmallow on the Ritz cracker, microwave for 5 seconds. After lunch we crawled into the tent and read Stella and the Forest Ferries.  Have fun and stay warm!

Veggie Tortellini Soup!

Image
I've eaten too much meat over the holidays, I need veggies! I kind of feel like that Activia commercial where they show the flashbacks of all the holiday food, while I don't need yogurt I do feel the need to get back to normal eating habits. This tortellini soup has all the flavor of a bowl of pasta but is full of veggies and it's a good way to have some pasta without eating a whole bowl full. This recipe can be cooked in the slow cooker or in a dutch oven on the stove. Ingredients: 1 can diced tomatoes (I use Aylmer's olive oil and garlic diced tomatoes) 1 box vegetable stock (no salt added) 1 cup of vegetable juice 1 zucchini 3 stalks of celery 2 carrots 1 tbsp herbes de province (savory, marjoram,  rosemary, thyme and oregano) 1 cup of tortellini Directions: Chop the veggies and add the to the pot or slow cooker Add the tomatoes, stock, vegetable juice and spices to the pot and stir to combine. Bring to a boil and simmer for about 20 min
